The santokumes are the Japanese version of the chef's knife. The Gs57 is a relatively small santokume, and therefore suitable for more accurate work or people with smaller hands. The dimples in the blade ensure that foodstuffs stick less. The design of the famous Japanese knives from Global dates from 1982 and has since won many prizes.
